This course shows us the vision of Jordi Roca, his inspiration, technique and his secrets that make his ice creams so different with their multiple textures, but above all, what makes them so absolutely delicious.
We will start by going into the techniques for the base of the ice cream and sorbets with three Jordi Roca star recipes. They are three different ice cream bases that push the limits of the classic recipes and reflect Jordi Roca’s philosophy. Jordi Roca will show us these recipes step by step with the exact ingredients so that the result is a perfect creamy ice cream or sorbet.
We will discover more than 20 different toppings that he uses in his ice cream parlour, Rocambolesc. These are not so much complements but an essential part of the complete ice cream, generating a combination of very interesting textures.
We will see the making of the recipes and some of the toppings and finally he will show us the key elements for a good ice cream.
